Baked Shrimp - Source: dlife.com


 

Their Ingredients:


1 lb raw medium shrimp , deveined
2 tbsp unsalted butter
2 medium garlic cloves , minced
2 tsp fresh lemon juice
2 tbsp chopped parsley
2 tsp grated Parmesan cheese


Their Directions:


1- Rinse shrimp under cool water, remove shells.
2 - Preheat oven to 350°F.
3 - In casserole dish, combine butter, garlic, lemon juice, and parsley . Place dish in oven until butter melts.
4 - Add shrimp and bake, covered, 10-12 minutes.
5 - Remove from oven, sprinkle Parmesan cheese on top.

I will be making the four (4) serving recipe, but it can be easily converted using the "re-calculate" tool featured online onside the recipe.
First, let's rinse our shrimp under cool water and remove the shells.  I like to peel all of my shrimp first then devein them all at once.



In the casserole dish, combine butter, garlic, lemon juice and parsley.


I have a young lemon tree in my yard, so when it is time for harvesting my 5 lemons a year, I squeeze them all and place the juice in an ice tray.  When they are set I remove them and store separately for whenever I need fresh lemon juice.  Now if you don't live in the perpetual heat like I do, you can just pick up some lemons on your next shopping trip.
I love using fresh herbs when I can, and even have a limited selection growing currently.  Tonight, though I will be using dried parsley since my bumper crop was mysteriously mowed down.  Later on that same night I found my cats hunched down in the corner with a pile of parsley and a stack of cigarette papers.


Note to the wise:  If the recipe calls for fresh herbs and you only have dried, make sure to cut the amount in half.  When you see my finished product you will understand the necessity of this note...lol....
O.K. moving on...place the dish in the oven until the butter melts, then add your shrimp.  Bake for 10 - 12 minutes, remembering to cover the casserole dish.
When done remove from oven, sprinkle with Parmesan cheese.  If you like you can place back in oven and broil on high for a few minutes to get a nice crust on your shrimp, but make sure your casserole dish is "broiler friendly".


Enjoy with your favorite salad, side dish or both.

I enjoyed this dish except for the fact I put WAY to much dried parsley flakes...lol...see aforementioned "Note to the wise".  It was a bit bland but adding a little no salt seasoning at the table made all the difference in the world.  


I would make this recipe again but I would add onions, peppers and mushrooms to the bake for a little needed flavor and color.
